Main Ingredients

  • 2 slices slices of bread Whole grain bread can be used for extra fiber.
  • 1 cup shredded cheese (cheddar or mozzarella) You can mix cheeses for different flavors.
  • 1/2 cup fresh blueberries Frozen blueberries can be used, but drain excess juice.
  • 1 tablespoon butter Spread on the bread for grilling.
  • to taste salt and pepper Season as desired.

Instructions
 

Preparation

  • Preheat a skillet or griddle over medium heat.
  • Spread butter on one side of each slice of bread.
  • On the unbuttered side of one slice, layer shredded cheese and blueberries.
  • Season with salt and pepper, then top with the second slice of bread, buttered side facing up.

Cooking

  • Cook in the skillet for 3-4 minutes on each side or until the bread is golden and the cheese is melted.
  • Remove from heat, slice, and serve warm.

Notes

Serve with fresh fruit or a light salad. Pairs well with tomato soup for dipping.
