  • 3 to 4 pounds beef chuck roast
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1 packet French onion soup mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Preparation

  • Preheat your oven to 325°F (165°C).
  • Season the beef chuck roast with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Brown the roast on all sides, then transfer it to a roasting pan.
  • In the same skillet, add the sliced onions and cook until they are soft and caramelized.
  • Add the beef broth and French onion soup mix to the skillet, stirring to combine.
  • Pour the onion mixture over the roast in the roasting pan.
  • Cover the pan with aluminum foil and roast in the oven for about 3 to 4 hours, or until the meat is tender and easily shreds.
  • Let the roast rest for a few minutes before slicing. Garnish with fresh thyme or parsley if desired.

Notes

Make sure to brown the roast well for extra flavor. Leftover meat can be used in sandwiches or salads for a tasty twist.
