Ingredients
  

Pasta and Vegetables

  • 8 oz pasta (any shape) Cook until al dente.
  • 2 cups fresh corn (cooked or grilled) Fresh corn is sweeter, but canned or frozen can be used.
  • 1 cup cherry tomatoes (halved) Add fresh for best flavor.
  • 1 each bell pepper (diced) Any color works.
  • 1/2 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped) Optional; can swap with different herbs.

Dressing

  • 1/4 cup lime juice Adjust to taste.
  • 1/4 cup olive oil
  • to taste salt and pepper Don't forget to season!

Optional Toppings

  • to taste feta cheese For topping.

Instructions
 

Preparation

  • Cook the pasta according to package instructions, then drain and let cool.
  • In a large bowl, combine the cooked pasta, corn, cherry tomatoes, bell pepper, red onion, and cilantro.

Dressing

  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the pasta salad and toss to combine.
  • Adjust seasoning and add feta if desired.

Serving

  • Serve chilled or at room temperature.

Notes

Great for picnics, barbecues, or as a side. Store leftovers in an airtight container; good for 3-5 days. Can freeze without fresh ingredients.
