  • 4 pieces hard-boiled eggs Make sure your eggs are hard-boiled ahead of time.
  • 2 tablespoons mayonnaise Can be swapped for Greek yogurt for a lighter option.
  • 1 tablespoon lemon juice Adjust to taste for fresh brightness.
  • to taste teaspoon salt and pepper Season to your liking.
  • optional chopped chives or green onions Adds additional flavor if desired.

Preparation

  • In a mixing bowl, mash the avocados.
  • Chop the hard-boiled eggs and add them to the bowl.
  • Stir in mayonnaise and lemon juice.
  • Season with salt and pepper to taste.
  • If desired, add chopped chives or green onions.
  • Mix well and serve chilled.

Notes

Store leftovers in an airtight container in the fridge. Best enjoyed within a couple of days. Freezing is not recommended due to texture changes.
