Ingredients
  

For the Roll-Ups

  • 2 cups Shredded Swiss Cheese
  • 0.5 pound Sliced Corned Beef Deli Meat
  • 1 cup Sauerkraut

For the Dressing

  • 0.25 cup Mayonnaise
  • 1 tsp Worcestershire Sauce
  • 1.5 tbsp Sugar-Free Ketchup
  • 2 tsp Swerve Confectioners' Sugar Substitute
  • 1 tbsp Horseradish Sauce
  • 1 pinch Paprika

Instructions
 

Preparation

  • Preheat the oven to 400 degrees.
  • Arrange the cheese into 8 circles on a parchment-lined baking sheet. You may need to use two separate baking sheets.
  • Bake for 6-8 minutes until the edges of the cheese circles are starting to brown and crisp up.
  • Stir together the dressing ingredients while the cheese is baking.
  • Remove the cheese circles from the oven and let cool for 1 minute.
  • Top each circle with slices of the corned beef, some sauerkraut, and a drizzle of the dressing.
  • Quickly fold the cheese circles up over the filling before they have hardened and cooled down.
  • Allow the roll-ups to cool and crisp up before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, wrap them in plastic wrap and place them in a freezer-safe bag. Reheat in the oven at 350 degrees until warmed through.
