Ingredients

Cheese Sauce Ingredients

  • 2 tablespoons Butter (Unsalted) for better control of seasoning
  • 4 ounces Cream Cheese Can substitute with dairy-free cream cheese
  • 1/4 cup Heavy Whipping Cream Use coconut cream as a low-carb alternative
  • 1 cup Shredded Cheddar Cheese Sharp cheddar for a more robust flavor

Crunchwrap Filling Ingredients

  • 1 pound Ground Beef Can substitute with ground chicken or turkey
  • 2 tablespoons Taco Seasoning Use homemade or low-sodium versions
  • 4 pieces Low-Carb Tortillas Brands like Mission Carb Balance or almond flour tortillas
  • 1 cup Sour Cream Substitute with Greek yogurt for a lighter version
  • 1 cup Lettuce Shredded iceberg or romaine
  • 1 medium Tomato Can replace with bell peppers or omit for fewer carbs
  • 1 cup Extra Cheddar Cheese Consider adding pepper jack for extra spice
  • 1/4 cup Cilantro Substitute with parsley if you’re not a fan
  • 1/2 cup Jalapeño Slices Optional spicy addition
  • 1 tablespoon Olive Oil Any cooking oil can work

Instructions

Cheese Sauce Preparation

  • In a small pan, melt butter and cream cheese together. Stir until smooth. Add in the heavy whipping cream and shredded cheddar cheese, mixing until creamy. Set aside.

Beef Cooking

  • In a skillet, heat olive oil over medium heat. Add the ground beef and taco seasoning. Cook until the meat is browned and no longer pink.

Tortillas Crisping

  • In a separate skillet, lightly toast the low-carb tortillas. You want them a bit crispy but still pliable for folding.

Crunchwrap Assembly

  • On each tortilla, layer sour cream, lettuce, cooked beef, diced tomatoes, extra cheese, cilantro, and jalapeños if desired.
  • Fold the tortilla like an envelope to seal the filling inside.

Crunchwrap Cooking

  • Place the crunchwrap seam side down in a hot skillet. Cook until golden brown on each side. Repeat with remaining wraps.

Serving

  • Serve warm and enjoy every crunchy, cheesy bite!

Notes

Use freshly grated cheese for the best melt. Ensure to seal the edges of the tortilla well to avoid any filling leaking. Experiment with different proteins like ground turkey or chicken for variety. If you like an extra kick, try adding a bit of hot sauce inside the wrap. Always taste your beef before serving so you can adjust the seasoning if needed.
