Ingredients

For the Cheese Sauce

  • 2 tablespoons Butter Unsalted for better control of seasoning
  • 4 ounces Cream Cheese Can substitute with dairy-free cream cheese
  • 1/4 cup Heavy Whipping Cream Use coconut cream as a low-carb alternative
  • 1 cup Shredded Cheddar Cheese Sharp cheddar for a more robust flavor

For the Filling

  • 1 pound Ground Beef Can substitute with ground chicken or turkey
  • 2 tablespoons Taco Seasoning Use homemade or low-sodium versions

For the Wraps

  • 4 pieces Low-Carb Tortillas Brands like Mission Carb Balance or almond flour tortillas
  • 1 cup Sour Cream Substitute with Greek yogurt for a lighter version
  • 1 cup Lettuce Shredded iceberg or romaine
  • 1 medium Tomato Can replace with bell peppers or omit for fewer carbs
  • 1 cup Extra Cheddar Cheese Consider adding pepper jack for extra spice
  • 1/4 cup Cilantro Substitute with parsley if you’re not a fan
  • 1/2 cup Jalapeño Slices Optional spicy addition
  • 1 tablespoon Olive Oil Any cooking oil can work

Instructions

Cheese Sauce Preparation

  • In a small saucepan, melt the butter over medium heat. Stir in the cream cheese and heavy whipping cream until smooth. Mix in 1 cup of shredded cheddar cheese until melted and creamy.

Beef Cooking

  • In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat and add taco seasoning, stirring to combine. Cook for an additional 2-3 minutes.

Tortillas Crisping

  • In a separate skillet, heat a bit of olive oil. Add each low-carb tortilla one at a time, cooking until they are warm and slightly crispy.

Crunchwrap Assembly

  • Lay the tortilla in front of you. Spread a layer of the cheese sauce, followed by the beef mixture, sour cream, lettuce, tomato, extra cheddar, cilantro, and jalapeños. Fold in the sides to create a wrap.

Crunchwrap Cooking

  • In the same skillet, return the wrapped crunchwrap seam side down. Cook on medium heat for about 3-4 minutes on each side until golden and crispy.

Serving

  • Cut in half and serve warm with your favorite dipping sauces or additional toppings like extra salsa and sour cream.

Notes

Make sure to melt the cream cheese completely for a smooth sauce. Use medium heat to allow the wraps to get nice and crunchy without burning. You can customize the toppings based on your family’s preferences. If you have leftovers, separate the filling from the tortilla for best freshness.
