Ingredients
  

  • 1 lb wild-caught salmon fresh or canned
  • 1/2 cup almond flour
  • 2 large eggs
  • Fresh herbs parsley, dill
  • Salt and pepper to taste
  • Garlic powder to taste
  • Avocado oil for cooking

Instructions
 

  • If using fresh salmon, remove skin and bones. Chop or pulse salmon in a food processor until minced.
  • In a large mixing bowl, combine the minced salmon, almond flour, eggs, herbs, and seasonings. Mix until the mixture holds together.
  • Shape the mixture into even patties.
  • Heat avocado oil in a non-stick skillet over medium heat.
  • Cook the patties for 3-4 minutes on each side or until golden and the internal temperature reaches 145°F.
  • Remove from heat and let rest for a few minutes before serving.

Notes

Use blanched almond flour for a better texture.
Ensure the salmon mixture is moist but not too wet. If too wet, add more almond flour. If too dry, add another egg yolk.
