- 4 boneless skinless chicken thighs (or breasts)
- 1/2 cup fresh pineapple juice
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 3 garlic cloves minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon honey or brown sugar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
In a mixing bowl, whisk together pineapple juice, orange juice, lime juice, olive oil, garlic, ginger, honey, salt, and pepper.
Place chicken in a resealable bag or shallow dish and pour marinade over. Seal or cover, refrigerate for 2-4 hours (overnight for best flavor).
Preheat grill to medium-high heat and oil grates to prevent sticking.
