Ingredients
  

  • 6 large bone-in lamb shoulder chops approximately 4 pounds
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced (or 1 tsp garlic powder)
  • 2 sprigs fresh rosemary
  • 1 tsp thyme leaves
  • 1 tsp mint leaves chopped
  • 1 tsp onion powder
  • Sea salt and black pepper to taste

Instructions
 

  • Combine olive oil, lemon juice, garlic, rosemary, thyme, mint, onion powder, salt, and pepper in a zip-lock bag.
  • Add the lamb shoulder chops to the bag. Seal and marinate for 30-60 minutes at room temperature or up to 24 hours in the fridge.
  • Heat a cast iron skillet over high heat. Sear the lamb chops for 2-3 minutes on each side until golden.
  • Reduce the heat to medium-low. Continue cooking, flipping occasionally, until the internal temperature reaches 130°F (medium-rare) or 140°F (medium).
  • Remove the lamb chops from the skillet and let them rest for 5 minutes.
  • Serve with your favorite sides, such as mashed potatoes or roasted vegetables.
