- 6 large bone-in lamb shoulder chops approximately 4 pounds
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic minced (or 1 tsp garlic powder)
- 2 sprigs fresh rosemary
- 1 tsp thyme leaves
- 1 tsp mint leaves chopped
- 1 tsp onion powder
- Sea salt and black pepper to taste
Combine olive oil, lemon juice, garlic, rosemary, thyme, mint, onion powder, salt, and pepper in a zip-lock bag.
Add the lamb shoulder chops to the bag. Seal and marinate for 30-60 minutes at room temperature or up to 24 hours in the fridge.
Heat a cast iron skillet over high heat. Sear the lamb chops for 2-3 minutes on each side until golden.
Reduce the heat to medium-low. Continue cooking, flipping occasionally, until the internal temperature reaches 130°F (medium-rare) or 140°F (medium).
Remove the lamb chops from the skillet and let them rest for 5 minutes.
Serve with your favorite sides, such as mashed potatoes or roasted vegetables.
