  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 1 each lemon, juiced and zested
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Cooking Steps

  • In a large skillet, heat olive oil over medium-high heat.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add asparagus and cook for 3-4 minutes until crisp-tender.
  • Push the asparagus to the side of the skillet and add shrimp.
  • Season with salt and pepper, then pour in lemon juice and zest.
  • Cook shrimp for 2-3 minutes or until pink and opaque.
  • Stir everything together and cook for another minute.
  • Garnish with chopped parsley and serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days or frozen for up to a month. Reheat gently in the microwave or stovetop. You can also swap shrimp for chicken or tofu, and add red pepper flakes for heat.
