Ingredients
  

  • 2 cans 5 oz each solid white albacore tuna, drained
  • 1/2 cup breadcrumbs
  • 2 tbsp lemon zest
  • 2 tbsp chopped parsley
  • 2 garlic cloves minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 1 egg
  • 2 tbsp olive oil for frying

Instructions
 

  • In a large mixing bowl, combine drained tuna, breadcrumbs, lemon zest, parsley, minced garlic, oregano, thyme, black pepper, and egg. Mix until ingredients are well combined.
  • Form the mixture into 4 small patties, about 2-3 inches in diameter.
  • Heat olive oil in a non-stick skillet over medium heat. Fry the tuna cakes for 3-4 minutes per side until golden brown and crispy.
  • Serve with lemon garlic aioli and a side of salad or grains.

Notes

For best results, drain the tuna thoroughly to avoid soggy cakes.
You can bake the cakes at 425°F for 10-12 minutes for a healthier alternative to frying.
Feel free to experiment with different herbs like dill or cilantro for extra flavor.
