Ingredients
  

  • 1 cup fresh lime juice about 8–10 limes
  • 1 cup granulated sugar
  • 2 cups water
  • 1 tbsp lime zest optional
  • 1 tbsp vodka optional, improves texture

Instructions
 

  • In a saucepan, combine sugar and water. Heat gently until sugar dissolves to make a simple syrup. Let cool completely.
  • In a mixing bowl, combine the cooled syrup, fresh lime juice, and lime zest (if using). Add vodka for better scoopability (optional).
  • Chill the mixture in the fridge for 1–2 hours.
  • Pour into an ice cream maker and churn according to the manufacturer's instructions (about 20–25 minutes).
  • Transfer to an airtight container, press plastic wrap against the surface, and freeze for 2+ hours until firm.
  • Let sit at room temperature for 5–10 minutes before scooping.

Notes

For best results, use fresh lime juice—bottled juice can taste artificial.
Lime zest adds a deeper citrus flavor—avoid the bitter white pith.
Store sorbet in an airtight container for up to 2–3 weeks.
Optional pairings: mint, coconut flakes, chili powder, tequila.
