Ingredients
  

Cookie Dough Ingredients

  • 2 cups all-purpose flour
  • ½ cup ground almonds (or almond flour) For nut-free, substitute with more flour.
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Jam Filling

  • ½ cup raspberry or apricot jam Use your favorite jam.
  • optional Powdered sugar for dusting Dust immediately before serving.

Preparation

  • In a bowl, mix the flour, ground almonds, cinnamon, baking powder, and salt.
  • In another bowl, cream the butter and powdered sugar together until fluffy.
  • Add the egg and vanilla, then gradually mix in the dry ingredients.
  • Form the dough into a ball and wrap it in plastic wrap. Chill for about an hour.

Baking

  • Preheat your oven to 350°F (175°C). On a floured surface, roll out the dough to about ¼ inch thick.
  • Cut out shapes using cookie cutters. Make a hole in the center of half the cookies for the jam to peek through.
  • Bake for 10-12 minutes until golden.
  • Cool completely, then spread jam on the solid cookies and top with the cut-out pieces.

Notes

Keep your cookies fresh by storing them in an airtight container at room temperature for about a week. They can also be frozen for up to three months, separating layers with parchment paper. Reheat in a preheated oven at 300°F (150°C) for about 5 minutes.
