Ingredients
  

For the Roasted Potatoes

  • 2 pounds Potatoes Cut into small pieces for even cooking.
  • 2 tablespoons Olive oil For tossing potatoes.
  • to taste Salt Season to preference.
  • to taste Pepper Season to preference.

For the Beef Filling

  • 1 pound Ground beef Can be substituted with ground turkey or chicken.
  • 1 packet Taco seasoning Follow package instructions for seasoning.

For the Toppings

  • 1 cup Pico de gallo Homemade or store-bought.
  • to taste Chipotle sauce For drizzling on top.

Preparation

  • Preheat the oven to 425°F (220°C).
  • Cut the potatoes into small pieces, toss them in olive oil, salt, and pepper.
  • Roast the potatoes for about 25-30 minutes until crispy.

Cook Beef

  • In a skillet, cook the ground beef over medium heat.
  • Add taco seasoning according to package instructions.

Assemble Bowls

  • Prepare pico de gallo by mixing chopped tomatoes, onions, cilantro, lime juice, and salt.
  • Place the roasted potatoes in a bowl, top with the seasoned beef, pico de gallo, and drizzle with chipotle sauce.
  • Enjoy immediately or divide into meal prep containers for the week.

Notes

You can add sliced avocado or a dollop of sour cream for extra creaminess. Pair with a side salad or tortilla chips for added flavor. Store leftovers in an airtight container for up to 3 days.
