  • 3-4 medium-sized zucchini, sliced
  • 2 pieces tomatoes, diced
  • 1/2 piece white onion, chopped
  • 4-6 slices bacon, cooked and crumbled

Cheeses

  • 1 block sharp cheddar cheese, shredded
  • 1/2 cup grated parmesan cheese

Oils and Seasonings

  • 2 tablespoons olive oil
  • 1/2 stick butter, melted
  • to taste salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the sliced zucchini, diced tomatoes, chopped onion, crumbled bacon, garlic powder, oregano, salt, and pepper.
  • Drizzle the olive oil and melted butter over the mixture and toss to coat evenly.
  • Transfer the mixture to a greased baking dish.
  • Top with shredded cheddar cheese and grated parmesan cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

This dish pairs wonderfully with a fresh salad or crusty bread. For storage, let it cool completely before placing in an airtight container; it stays fresh for about 3-4 days. For freezing, cool before covering tightly.
