Strainer or colander
- 12 oz Lobster tails and claws
- 250 g Tagliatelle or spaghetti pasta
- 2 cups Heavy cream
- 2/3 cup White wine
- 4 Garlic cloves
- 2 Shallots
- 1 tbsp Butter
- Fresh herbs basil, dill, parsley - as needed
- Parmesan cheese - as needed
- Lemon juice - as needed
- Calabrian chili paste optional - as needed
- Tomato paste optional - as needed
Prepare the Lobster:
If using live lobster, boil or steam as per instructions and extract the meat. If pre-cooked, crack claws and remove tail meat. Cut into 1-inch pieces.
Infuse the Cream:
Simmer lobster shells, heavy cream, garlic, and thyme in a saucepan for 10 minutes. Let infuse for 20 minutes, then strain.
Cook the Pasta:
Boil pasta in salted water until al dente. Reserve some pasta water and drain.
Make the Sauce:
In a skillet, melt butter and sauté garlic until fragrant. Add white wine and let it reduce slightly. Stir in infused cream, Parmesan, and lemon juice. Simmer until the sauce thickens.
Combine:
Toss cooked pasta with the sauce and mix in lobster pieces. Add pasta water as needed for consistency.
Serve:
Garnish with fresh herbs, extra Parmesan, and a lemon wedge. Serve immediately with crusty bread and a crisp white wine.
