Main Ingredients

  • 1 pound ground beef or sausage Can use turkey or chicken for a lighter version.
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cups sugar-free marinara sauce Can substitute with pesto or Alfredo sauce.
  • 2 cups shredded mozzarella cheese Use dairy-free cheese for a dairy-free option.

Seasonings

  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, brown the ground beef or sausage with the chopped onion and bell pepper until fully cooked. Drain excess grease.
  • Stir in the marinara sauce, Italian seasoning, salt, and pepper.

Layering and Baking

  • In a baking dish, layer half of the meat mixture, then half of the mozzarella cheese. Repeat with the remaining meat and cheese.
  • Bake in the preheated oven for about 20-25 minutes, until the cheese is melted and bubbly.
  • Let it cool slightly before serving.

Notes

This casserole pairs wonderfully with a green salad or steamed veggies. Let it sit for a few minutes before serving to help it set up. Don’t overcook the meat; it should be just browned for tenderness.
