Ingredients
  

Mango Ice Cream

  • 2 cups frozen mango chunks
  • 1 cup canned coconut milk

Mango Cake

  • 1 cup unsalted butter softened
  • 1 3/4 cups sugar
  • 6 large egg whites
  • 1 cup mango puree
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 pinch salt

Mango Compote

  • 1 lb fresh mango diced
  • 1/4 cup sugar
  • 1 squeeze lime juice

Mango Buttercream

  • 1 cup butter softened
  • 1 cup confectioners' sugar
  • 1 cup mango puree

Instructions
 

Quick and Healthy Mango Ice Cream:

  • Blend frozen mango chunks, coconut milk, vanilla extract, and agave nectar in a high-powered blender until smooth.
  • Pour the mixture into a freezer-safe container and freeze for 3-4 hours, stirring occasionally.
  • Serve in bowls or cones with toppings like fresh mango chunks, toasted coconut, or chopped nuts.

Classic Mango Cake with Buttercream Frosting:

  • Preheat oven to 350°F (175°C) and grease three 9-inch round cake pans.
  • In a mixing bowl, beat butter and sugar until fluffy. Add egg whites, then mango puree.
  • Combine flour, baking powder, and salt, then add to wet ingredients.
  • Divide batter among pans and bake for 20-22 minutes.

Prepare mango compote and buttercream:

  • simmer mango, sugar, and lime juice for compote; whip butter, sugar, and mango puree for buttercream.
  • Layer the cake with compote and frost with buttercream.
