  • 1 lb Brussels sprouts, trimmed and halved
  • 1 medium butternut squash, peeled and cubed (about 4 cups)
  • 6 slices bacon, chopped Ensure it's crispy for best texture.
  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the halved Brussels sprouts and cubed butternut squash.
  • Add the chopped bacon to the bowl with the vegetables.
  • Drizzle with olive oil and add salt, pepper, garlic powder, and crushed red pepper flakes (if using). Toss until well coated.
  • Transfer the mixture onto a large baking sheet lined with parchment paper, spreading it evenly for even roasting.

Roasting

  • Roast the vegetables in the preheated oven for about 20-25 minutes, stirring halfway through, until the Brussels sprouts are tender and bacon is crispy.
  • Remove the baking sheet from the oven. Drizzle the maple syrup over the roasted vegetables and bacon, tossing gently to combine.
  • Return to the oven and roast for an additional 5-10 minutes, allowing the syrup to caramelize and coat the vegetables.

Serving

  • Once cooked through, remove from the oven and garnish with chopped fresh parsley before serving.

Notes

This dish pairs beautifully with roasted chicken or Thanksgiving turkey. Adjust seasoning to taste, and feel free to add fresh herbs like thyme for extra flavor.
