Ingredients
  

  • 2 cups mixed nuts (pecans, almonds, walnuts, or cashews)
  • ¼ cup pure maple syrup
  • 1 tbsp butter or coconut oil
  • ½ tsp cinnamon
  • ¼ tsp sea salt
  • ¼ tsp vanilla extract (optional)
  • pinch cayenne pepper (optional, for heat)

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment or silicone mat for easy cleanup.
  • In a saucepan, heat maple syrup, butter/oil, cinnamon, and salt over medium heat until it bubbles. Stir in vanilla extract (if using).
  • Add nuts to the saucepan and stir until fully coated in glaze.
  • Spread coated nuts in a single layer on the baking sheet. Bake for 18–20 minutes, stirring halfway. Watch closely in the last 5 minutes.
  • Let nuts cool completely on the tray. The glaze will harden as they cool. Break apart if needed and store airtight.

Notes

Use any combination of nuts — almonds, pecans, walnuts, cashews. For variation, try pumpkin spice, chili-lime, or rosemary-maple. Cool completely before storing to preserve crunch. Perfect in salads, on oatmeal, or packed in jars for gifting.
