  • 1 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup granulated sugar
  • 1 large egg Room temperature is best.
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup maraschino cherries, chopped Use fresh for best flavor.
  • as needed Extra sugar for rolling

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Fold in the chopped maraschino cherries.

Baking

  • Roll tablespoons of dough into balls and then roll them in extra sugar.
  • Place on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week. Freeze baked cookies for up to three months. Chill dough for thicker cookies and adjust baking time for dark baking sheets.
