- For the Marinade:
- 1/4 cup tequila
- Juice and zest of 2 limes
- 1/4 cup orange juice
- 2 tbsp olive oil
- 3-4 cloves garlic minced
- 1/4 cup cilantro chopped
- 1 tbsp honey
- Salt & black pepper to taste
- 1/2 tsp red pepper flakes optional
- For the Skewers:
- 2 lbs jumbo shrimp peeled (tails on)
- Wooden or metal skewers soak wooden ones in water for 30 minutes
- Lime wedges for serving
Make the Marinade: In a bowl, mix tequila, lime juice and zest, orange juice, olive oil, garlic, cilantro, honey, salt, black pepper, and red pepper flakes. Stir well.
Prep the Shrimp: Clean and devein shrimp, leaving tails on for easy handling. Pat dry with paper towels.
Marinate the Shrimp: Place shrimp in a zip-top bag or bowl and pour the marinade over them. Mix gently to coat. Marinate for 30 minutes maximum to avoid overcooking.
Skewer the Shrimp: Thread 5-6 shrimp per skewer, leaving space between each shrimp.
Grill the Shrimp: Preheat the grill to medium-high heat (400°F). Clean and oil the grill grates. Grill shrimp for 2-3 minutes per side, or until they turn pink and opaque.
Serve: Remove from the grill, squeeze fresh lime over top, and serve with extra cilantro. Enjoy with rice, tacos, or just as a snack!
You can make the marinade up to 2 days ahead but do not add shrimp until 30 minutes before grilling.
For alcohol-free options, substitute tequila with lime juice and a splash of water.
These shrimp can be broiled in the oven on high for 4-5 minutes as a substitute for grilling.
