Ingredients
  

  • 4 cups shredded chicken
  • 6 cups chicken broth
  • 1 cup ditalini pasta
  • 3-5 ounces baby spinach
  • 1/2 cup sun-dried tomatoes
  • 8 garlic cloves
  • 3/4 cup heavy cream
  • 1/2-1 cup grated Parmesan cheese

Instructions
 

  • Heat 2 tablespoons of olive oil in a large pot.
  • Sauté onions for 2 minutes.
  • Add garlic and cook for 1-2 minutes.
  • Stir in 4 tablespoons of sun-dried tomato paste.
  • Pour in chicken broth and simmer for 8-10 minutes.
  • Add shredded chicken and cook for 4-5 minutes.
  • Stir in ditalini pasta, cooking for 3-5 minutes.
  • Finish with 3/4 cup heavy cream and Parmesan, stirring until smooth.

Notes

For time-saving, use pre-cooked rotisserie chicken.
Adjust spice level by adding red pepper flakes or cayenne for extra heat.
Store leftovers in an airtight container in the fridge for up to 4 days.
For freezing, use a freezer-safe container and store for 2-3 months. Reheat gently on the stovetop or microwave, adding cream if needed.
