  • 2 pieces chicken breasts Boneless and skinless preferred
  • 8 oz cheese tortellini Use fresh or dry tortellini
  • 1 cup sun-dried tomatoes Packed in oil for best flavor
  • 1 cup heavy cream For a richer sauce
  • 2 cloves garlic, minced
  • 1 cup spinach Fresh spinach preferred
  • 1 teaspoon Italian seasoning Adjust to taste
  • to taste Salt and pepper
  • Grated Parmesan cheese for serving Optional topping

Preparation

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large skillet over medium heat, add a bit of oil and cook the chicken breasts until golden brown and cooked through. Remove from skillet and slice.
  • In the same skillet, add garlic and sun-dried tomatoes; sauté for about 1 minute.
  • Add the heavy cream and Italian seasoning. Stir well and bring to a simmer.
  • Add the spinach and allow it to wilt.
  • Stir in the cooked tortellini and sliced chicken, mixing everything to coat in the sauce.
  • Season with salt and pepper to taste, and serve topped with grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Can be frozen for up to three months. Reheat gently in the microwave or on the stove. For variations, swap chicken for shrimp or sausage, use gluten-free tortellini, or add different vegetables.
