Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ¼ red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • ¼ cup crumbled feta cheese optional
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 clove garlic minced
  • ½ tsp dried oregano
  • Salt and black pepper to taste

Instructions
 

  • Drain and rinse chickpeas thoroughly. Pat them dry and place them in a mixing bowl.
  • Chop the cherry tomatoes, cucumber, red onion, parsley, and mint. Add them to the bowl.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper.
  • Pour the dressing over the chickpea mixture and toss gently to combine.
  • Add crumbled feta cheese if using, and mix lightly.
  • Let the salad sit for at least 10-15 minutes to allow flavors to meld.
  • Serve chilled and enjoy!

Notes

Store in an airtight container in the refrigerator for up to 3-4 days.
For extra crunch, add bell peppers or kalamata olives.
Best served cold for a refreshing summer meal.
