Mediterranean Quesadilla with Spinach, Feta & Mozzarella

Ingredients
  

  • 2 large whole wheat tortillas
  • 2 cups fresh baby spinach
  • 0.5 cup crumbled feta cheese
  • 0.5 cup shredded low-moisture mozzarella cheese
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 0.25 cup thinly sliced red onions

Instructions
 

  • Heat 0.5 tablespoon of olive oil in a non-stick skillet over medium heat.
  • Sauté the baby spinach and red onions until the spinach is fully wilted and moisture has evaporated.
  • Remove the vegetable mixture from the pan and wipe the pan clean.
  • Place one tortilla in the skillet and layer half of the mozzarella, sautéed spinach, and feta on one side.
  • Season with half of the oregano and garlic powder.
  • Fold the tortilla in half and cook for 3 minutes per side until the exterior is golden brown and cheeses are melted.
  • Repeat the process for the second tortilla.
  • Slice into wedges and serve immediately.
