baby spinach

feta cheese

low-moisture mozzarella cheese

teaspoon dried
oregano

teaspoon garlic

oil

sliced red onions
Instructions
Heat 0.5 tablespoon of olive oil in a non-stick skillet over medium heat.
Sauté the baby spinach and red onions until the spinach is fully wilted and moisture has evaporated.
Remove the vegetable mixture from the pan and wipe the pan clean.
Place one tortilla in the skillet and layer half of the mozzarella, sautéed spinach, and feta on one side.
Season with half of the oregano and garlic powder.
Fold the tortilla in half and cook for 3 minutes per side until the exterior is golden brown and cheeses are melted.
Repeat the process for the second tortilla.
Slice into wedges and serve immediately.
