  • 1 pound large shrimp, peeled and deveined Fresh shrimp recommended for best flavor.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled Adjust according to preference.
  • Fresh parsley for garnish

Cooking Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the garlic and sauté for 1 minute until fragrant.
  • Add the shrimp and cook until they turn pink, about 3-4 minutes.
  • Stir in the sun-dried tomatoes, oregano, basil, salt, and pepper. Cook for an additional 2 minutes.
  • Remove from heat and sprinkle with crumbled feta cheese.
  • Garnish with fresh parsley and serve warm.

Notes

Pairs well with a light salad or served over couscous. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month.
