Ingredients
  

  • 4 medium sweet potatoes approx. 2 pounds
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive or avocado oil
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh thyme
  • 3 cloves garlic finely minced
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth

Optional Ingredients

  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raw pecans
  • 3 tablespoons maple syrup

Instructions
 

  • Preheat oven to 400°F (204°C).
  • Wash and dry sweet potatoes thoroughly, then slice them into ½-inch thick rounds.
  • In a small saucepan, melt butter and mix with olive oil, rosemary, thyme, garlic, sea salt, and black pepper.
  • Coat the potato slices evenly with the spiced butter mixture.
  • Arrange the slices on a 12x17-inch baking sheet, ensuring they are not overcrowded.
  • Roast for 30-35 minutes, flipping halfway through, until golden and fork-tender.
  • Optional: Drizzle maple syrup over the sweet potatoes during the last 5-7 minutes of roasting.

Notes

For extra flavor, consider adding ground cinnamon or raw pecans.
If you prefer a sweeter taste, drizzle with maple syrup just before serving.
