Ingredients
  

  • 2 cups long-grain white rice rinsed
  • 2 cups low-sodium chicken broth
  • 1 cup tomato sauce
  • 2 tablespoons butter
  • 1 small white onion diced
  • 2 cloves garlic minced
  • 1 tablespoon jalapeño diced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chipotle chili powder
  • 1 teaspoon kosher salt
  • 1/4 cup fresh cilantro chopped (for garnish)
  • Lime wedges for serving

Instructions
 

  • Rinse the rice under water to remove excess starch.
  • In the rice cooker, combine the rinsed rice, chicken broth, tomato sauce, diced onion, minced garlic, jalapeño, cumin, chipotle chili powder, and salt. Stir to combine.
  • Close the rice cooker and set it to cook.
  • Once cooking is complete, let the rice sit for 5 minutes, then fluff it with a fork.
  • Serve the rice in a bowl, garnish with chopped cilantro, and add lime wedges for extra flavor.
