  • 8 oz cream cheese, softened Use softened cream cheese for a smooth filling.
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream Can be substituted with Greek yogurt.
  • 1/4 cup key lime juice Regular lime juice can be used if needed.
  • 1 tsp vanilla extract
  • 1 cup whipped cream

Crust

  • Graham cracker crumbs For crust. Crushed cookies or nut crusts can be used as alternatives.

Garnish

  • Lime slices or zest Adds extra zing.

Preparation

  • In a mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Add sour cream, key lime juice, and vanilla extract; mix until well combined.
  • Gently fold in the whipped cream until incorporated.

Assembly

  • In small cups or jars, layer graham cracker crumbs at the bottom.
  • Spoon the cheesecake mixture over the crumbs.
  • Chill in the refrigerator for at least 2 hours.
  • Garnish with lime slices or zest before serving.

Notes

These mini cheesecakes can be made ahead of time and stored in an airtight container. They will last for about 3 days in the fridge. For freezing, keep the filling and crust separate.
