Ingredients
  

  • 24 scoop -style tortilla chips
  • 1/2 cup fat -free refried beans
  • 4 ounces light cream cheese, softened
  • 1/2 cup non -fat plain Greek yogurt
  • 1 tablespoon low -sodium taco seasoning
  • 1/4 cup iceberg lettuce, finely shredded
  • 1/4 cup Roma tomatoes, finely diced
  • 2 tablespoons reduced -fat shredded cheddar cheese
  • 1 tablespoon black olives, sliced
  • 1 tablespoon fresh cilantro, finely chopped

Instructions
 

  • In a medium mixing bowl, combine the softened light cream cheese, non-fat Greek yogurt, and taco seasoning. Whisk until the mixture is uniform and smooth.
  • Arrange the tortilla scoops on a large serving platter or flat work surface.
  • Place approximately 1 teaspoon of fat-free refried beans into the base of each tortilla scoop, pressing down gently to create an even layer.
  • Transfer the yogurt and cream cheese mixture into a piping bag or a plastic bag with the corner snipped off.
  • Pipe approximately 1 teaspoon of the seasoned yogurt mixture over the bean layer in each scoop.
  • Top each bite with a pinch of shredded lettuce, diced tomatoes, and shredded cheddar cheese.
  • Finish by placing one olive slice and a sprinkle of cilantro on top of each bite.
  • Serve immediately to ensure the tortilla chips remain crisp.
