- 1 lb 450g ground beef (80/20 for best flavor)
- 8 oz 225g noodles (egg noodles or rice noodles)
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 3 cloves garlic minced
- 1 tsp fresh ginger grated
- 1 tbsp sesame oil
- 1/2 cup green onions chopped
- 1/2 cup beef broth
- 1 tsp cornstarch optional, for thickening
- 1/2 tsp red pepper flakes optional, for spice
- 1 tbsp vegetable oil
Cook the noodles according to package instructions until al dente. Drain and set aside.
Heat a large skillet or wok over medium-high heat. Add vegetable oil.
Add ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat.
Add minced garlic and grated ginger. Sauté for 30 seconds until fragrant.
In a small bowl, mix soy sauce, brown sugar, beef broth, and cornstarch (if using). Pour into the skillet.
Stir well and let the sauce simmer for 2-3 minutes until slightly thickened.
Add cooked noodles to the beef mixture. Toss to coat evenly.
Remove from heat and mix in sesame oil and chopped green onions.
Serve immediately, garnished with extra green onions and red pepper flakes if desired.
For a spicier dish, add sriracha or extra red pepper flakes.
Substitute ground turkey or chicken for a leaner alternative.
Store leftovers in an airtight container for up to 3 days.
