Ingredients
  

  • 14 oz sweetened condensed milk
  • 2.5 cups graham cracker crumbs
  • 2 cups shredded sweetened coconut
  • 0.5 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 0.5 cup mini chocolate chips, toffee bits, or chopped nuts (optional)
  • to taste extra shredded coconut or powdered sugar for rolling (optional)

Instructions
 

  • In a large bowl, mix melted butter and sweetened condensed milk until smooth. Stir in vanilla extract and salt.
  • Add graham cracker crumbs and shredded coconut. Mix until evenly combined. Adjust texture by adding crumbs or more condensed milk as needed.
  • Fold in chocolate chips, nuts, or toffee bits if using.
  • Scoop into 1-inch balls using a cookie scoop. Roll between hands. Optionally roll in extra coconut or powdered sugar.
  • Place on parchment-lined tray. Chill in fridge for 1 hour or freeze for 20 minutes until set.
  • Serve chilled or at room temp. Store in fridge for 1 week or freeze up to 2 months.

Notes

For the best results, use sweetened shredded coconut and good-quality butter. Keep hands damp for easy rolling, and refrigerate before shaping if too sticky. Roll in coconut, powdered sugar, or dip in chocolate for variation.
