Ingredients
  

For the Chocolate Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract

For the Coconut Filling:

  • 1 cup sweetened condensed milk
  • 2 cups shredded sweetened coconut
  • For the Coconut Buttercream Frosting:
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp coconut extract

For Decoration:

  • Sweetened shredded coconut for coating

Instructions
 

Prepare the Cake Base:

  • Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add milk, vegetable oil, eggs, and vanilla extract, mixing until smooth.
  • Divide the batter evenly among the cake pans.
  • Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the Coconut Filling:

  • In a bowl, combine sweetened condensed milk and shredded coconut.
  • Prepare the Coconut Buttercream Frosting:
  • In a large bowl, beat butter until creamy. Gradually add powdered sugar, beating until smooth.
  • Add coconut extract and mix well.

Assemble the Cake:

  • Place one chocolate cake layer on a serving platter. Spread half of the coconut filling on top.
  • Add the second layer and spread the remaining coconut filling.
  • Place the final layer on top and frost the entire cake with coconut buttercream.

Decorate the Cake:

  • Press sweetened shredded coconut onto the sides and top of the cake for a classic Mounds Bar look.
  • Chill the cake in the refrigerator for at least 30 minutes to set.
