Ingredients
  

For the Chicken Marinade

  • 1 cup buttermilk For marinating the chicken.
  • 1 tablespoon hot sauce To add heat to the marinade.
  • 4 pieces boneless chicken thighs Can substitute with chicken breasts if desired.

For the Dredging Mixture

  • 1 cup all-purpose flour For coating the chicken before frying.
  • 1 tablespoon paprika Adds flavor and color.
  • 1 tablespoon cayenne pepper Adjust to taste for spice preference.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste salt and pepper For seasoning.

For the Sandwich Assembly

  • 4 pieces sandwich buns
  • as needed pickles For topping.

  • Oil for frying oil Use for cooking the chicken.

Instructions
 

Marinating the Chicken

  • In a bowl, combine buttermilk and hot sauce; add chicken and marinate for at least 1 hour or overnight.

Preparing the Dredge

  • In another bowl, mix flour, paprika, cayenne, garlic powder, onion powder, salt, and pepper.

Frying the Chicken

  • Heat oil in a deep skillet.
  • Dredge the marinated chicken in the flour mixture and fry until golden brown and cooked through, about 6-8 minutes per side.
  • Remove chicken and drain on paper towels.

Assembling the Sandwiches

  • Place the fried chicken on buns, top with pickles and coleslaw if desired. Serve hot.

Notes

Make sure to marinate the chicken for at least an hour; overnight is even better. Keep the oil at the right temperature, and don't overcrowd the skillet.
