No Bake Thin Mint Cookie Truffles

Ingredients
  

Truffle Ingredients

  • 9 ounces Girl Scout Thin Mint Cookies (1 package, or Keebler Grasshopper cookies)
  • 4 ounces cream cheese (softened) Ensure it's at room temperature for easy mixing.
  • 12 ounces Guittard Green Mint Chips (1 bag) Can substitute with white chocolate chips.

Optional Garnish

  • 1/4 cup reserved cookie crumbs For sprinkling on top of the truffles.

Instructions
 

Preparation

  • Blend cookies in a blender or food processor until fine crumbs form.
  • Set aside ¼ cup crumbs to sprinkle on top of truffles, if desired.
  • Place cookie crumbs and softened cream cheese in a large mixing bowl and mix until well combined.
  • Roll the mixture into 1-inch sized balls and place on a baking sheet lined with parchment or wax paper.
  • Place the baking sheet in the fridge for 30 minutes.

Dipping

  • Melt mint chips in a microwave-safe bowl in the microwave in 30-second increments, stirring each time, until melted (about 2 minutes).
  • Use two forks to dip each ball into the melted chocolate until completely covered.
  • Lift the ball out of the chocolate and scrape off excess chocolate before placing it back on the baking sheet.
  • Sprinkle on reserved cookie crumbs for garnish, if desired.

Setting

  • Place truffles in the fridge for a few minutes to set up.

Notes

Store in an airtight container in the fridge for up to a week. They can be frozen for longer storage. Let thaw in the fridge before serving.
