- 4 medium green bell peppers
- 28 oz can of tomato sauce
- 1/4 cup white vinegar
- 1.5 lbs of lean ground beef
- 1 cup cooked rice
- 1/2 cup breadcrumbs
- 6 tbsp grated Parmesan cheese
- 1/4 cup chopped onion
- 1 egg
- Salt garlic powder, and black pepper to taste
Preheat oven to 350°F (175°C).
Parboil the bell peppers: Boil a pot of salted water and cook the peppers for 3-5 minutes until slightly soft. Drain and set aside.
Cook the ground beef and onions in a skillet over medium heat until beef is browned and onions are translucent (about 5 minutes).
Mix in rice, breadcrumbs, Parmesan, egg, garlic powder, salt, pepper, and Italian seasoning. Stir until combined.
Stuff the peppers with the beef and rice mixture using an ice cream scoop, packing it in tightly.
In a baking dish, mix the tomato sauce and vinegar. Place the stuffed peppers in the dish and cover with foil.
Bake for 1 hour and 20 minutes, basting the peppers with sauce a few times.
Serve hot, garnished with fresh herbs or extra cheese if desired.
