Old Fashioned Stuffed Bell Peppers

Ingredients
  

  • 4 medium green bell peppers
  • 28 oz can of tomato sauce
  • 1/4 cup white vinegar
  • 1.5 lbs of lean ground beef
  • 1 cup cooked rice
  • 1/2 cup breadcrumbs
  • 6 tbsp grated Parmesan cheese
  • 1/4 cup chopped onion
  • 1 egg
  • Salt garlic powder, and black pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Parboil the bell peppers: Boil a pot of salted water and cook the peppers for 3-5 minutes until slightly soft. Drain and set aside.
  • Cook the ground beef and onions in a skillet over medium heat until beef is browned and onions are translucent (about 5 minutes).
  • Mix in rice, breadcrumbs, Parmesan, egg, garlic powder, salt, pepper, and Italian seasoning. Stir until combined.
  • Stuff the peppers with the beef and rice mixture using an ice cream scoop, packing it in tightly.
  • In a baking dish, mix the tomato sauce and vinegar. Place the stuffed peppers in the dish and cover with foil.
  • Bake for 1 hour and 20 minutes, basting the peppers with sauce a few times.
  • Serve hot, garnished with fresh herbs or extra cheese if desired.
