Ingredients
  

  • 4 boneless skinless chicken breasts 6-8 oz each
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 1/4 cups heavy cream
  • 1/2 cup Parmesan cheese freshly grated
  • 5 oz fresh spinach
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional

Instructions
 

Prepare the Chicken:

  • Pat the chicken dry with paper towels. Season generously with salt and pepper.

Sear the Chicken:

  • Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4-5 minutes per side until golden brown. Remove and set aside.

Make the Sauce:

  • In the same skillet, sauté minced garlic until fragrant. Add sun-dried tomatoes and cook for 1 minute. Pour in heavy cream, stirring continuously. Sprinkle in Parmesan cheese, Italian seasoning, and red pepper flakes (if using).

Combine and Simmer:

  • Return chicken to the skillet and add spinach. Lower heat and let simmer for 5-7 minutes, until the chicken reaches an internal temperature of 165°F.

Serve and Enjoy:

  • Serve hot with your favorite side dishes like pasta, rice, or roasted vegetables.

Notes

For a dairy-free version, substitute heavy cream with coconut milk and omit Parmesan cheese.
For a low-carb option, serve with cauliflower rice or zucchini noodles.
