For the Base:
- 3 large yellow onions thinly sliced
- 3 tbsp butter
- 2 tbsp sugar optional
- 4 cloves garlic minced
- 1 tbsp fresh thyme or 1 tsp dried
- 8 oz pasta rotini, penne, or similar
- 3 cups beef broth or veggie broth
- 1/2 cup dry white wine or broth + 1 tbsp vinegar
For Topping:
- 1 cup shredded gruyere cheese
- 1/2 cup shredded parmesan cheese
- Fresh parsley chopped (optional)
Step 1: Caramelize the Onions
In a large pot, melt butter over medium heat.
Add sliced onions and sugar. Stir well.
Cook for 20–25 minutes, stirring occasionally, until golden and caramelized. Reduce heat if onions begin to burn.
In the last 2 minutes, add garlic and thyme.
Step 2: Cook the Pasta
Add pasta directly into the pot with the onions.
Pour in the beef broth and wine.
Bring to a boil, then reduce heat and simmer uncovered for 10–12 minutes until pasta is al dente and liquid has mostly reduced. Stir occasionally.
Step 3: Finish It Off
Once pasta is cooked and some thick liquid remains, turn off heat.
Sprinkle gruyere and parmesan on top.
Cover for 3 minutes until cheese melts.
Stir to distribute the cheesy goodness.
Garnish with fresh parsley if desired. Serve warm!
For extra creaminess, add 1/2 cup of cream cheese with the cheese.
Add rotisserie chicken or sautéed mushrooms for variation.
Store leftovers in an airtight container for up to 4 days. Reheat with a splash of broth or water.
