  • 1 pound Italian sausage Choose mild or hot according to preference.
  • 1/2 cup diced onion
  • 1 teaspoon minced garlic
  • 2 cups chicken broth Use low-sodium for a healthier option.
  • 1 24-ounce jar marinara sauce Select your favorite brand.
  • 8 ounces uncooked spaghetti noodles Can use whole wheat or gluten-free.
  • 8 ounces cream cheese For a creamier consistency.
  • 1 cup cottage cheese
  • 1/4 cup sour cream

Cooking

  • In a large skillet with deep sides, brown and crumble the sausage with the onions over medium-high heat.
  • Add the garlic and cook for 1 minute.
  • Stir in the broth, marinara, and uncooked spaghetti noodles. Bring to a boil while stirring frequently, then reduce heat to medium-low.
  • Remove from heat and stir in the cream cheese, cottage cheese, and sour cream. Adjust consistency with additional broth or water if needed.
  • Serve warm.

Notes

For serving, garnish with grated parmesan cheese. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat with a splash of broth if necessary.
