  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed Oreo cookies
  • 1/2 cup chocolate chips
  • 1/4 cup peppermint extract
  • 1 cup brewed coffee Cooled

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large mixing bowl, melt the butter and then stir in the granulated sugar.
  • Add eggs one at a time, mixing well between each addition, then stir in the vanilla extract.
  • In a separate bowl, combine flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients into the wet ingredients, mixing just until combined.
  • Fold in the crushed Oreo cookies, chocolate chips, peppermint extract, and brewed coffee.
  • Pour the batter into the prepared baking pan and spread it evenly.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool before cutting into squares and serving.
