- For the Brisket:
- 4-5 pound beef brisket flat cut or point cut
- 2 tbsp olive oil
- 1/4 cup Worcestershire sauce
- For the Dry Rub:
- 3 tbsp brown sugar
- 2 tbsp kosher salt
- 2 tbsp black pepper
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp mustard powder
- 1 tsp cayenne pepper optional
- Optional Extras:
- 1 large onion sliced
- 4 cloves garlic smashed
- 1 cup beef broth
- 2 tbsp apple cider vinegar
Prep the Brisket: Remove from fridge 30 minutes before cooking. Preheat oven to 300°F (275°F for hot ovens). Trim excess fat, leaving 1/4 inch. Pat dry with paper towels.
Season the Brisket: Mix dry rub ingredients. Brush brisket with olive oil and Worcestershire sauce. Generously coat with dry rub and let sit for 15-30 minutes.
Prepare Roasting Pan: Spread onions at the bottom of a roasting pan. Place brisket fat side up on top of onions. Add garlic, broth, and vinegar around the meat.
Roast Low and Slow: Cover tightly with foil. Roast for 1 hour per pound (about 5 hours for 5lb). At 4 hours, check internal temp (goal: 195-205°F). Uncover for last hour for a darker crust if desired.
Rest & Slice: Remove from oven and keep covered. Let rest 30-60 minutes before slicing against the grain for best tenderness.
For a Texas-style brisket, use only salt and pepper.
To add a smoky flavor, place soaked wood chunks in the pan.
Make ahead and refrigerate overnight for enhanced flavor.
To reheat, cover and warm at 300°F for 30-45 minutes.
