Instructions
Preheat the oven to 400°F (200°C).
Slice the carrots diagonally into 2-inch pieces or leave whole if small.
In a large bowl, toss carrots with olive oil, salt, pepper, and thyme until evenly coated.
Arrange carrots in a single layer on a rimmed baking sheet.
Roast for 20 to 25 minutes, flipping halfway through, until tender and caramelized.
Remove from oven and serve warm.
