Ingredients
  

  • 1 pound fresh carrots, peeled and trimmed
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Slice the carrots diagonally into 2-inch pieces or leave whole if small.
  • In a large bowl, toss carrots with olive oil, salt, pepper, and thyme until evenly coated.
  • Arrange carrots in a single layer on a rimmed baking sheet.
  • Roast for 20 to 25 minutes, flipping halfway through, until tender and caramelized.
  • Remove from oven and serve warm.
