- 1 cup all-purpose flour or gluten-free flour blend
- 2 teaspoons baking powder
- 1 tablespoon granulated sugar or maple sugar
- 2 eggs
- 3 tablespoons melted butter or vegan butter
- 1 teaspoon vanilla extract
- 1 cup water
- 1/8 teaspoon salt
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
In a separate bowl, whisk the eggs, melted butter, vanilla extract, and water.
Gently fold the wet ingredients into the dry ingredients until combined. Avoid overmixing.
Let the batter rest for 5 minutes.
Heat a lightly oiled non-stick skillet or griddle over medium-low heat.
Pour 1/4 cup of batter onto the hot surface to form pancakes.
Cook until bubbles form on the surface and edges start to set (2-3 minutes). Flip and cook the other side for an additional 2-3 minutes until golden brown.
Transfer pancakes to a cooling rack or plate, and repeat with remaining batter.
