Ingredients
  

For the Chicken

  • 4 pieces chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Add according to preference
  • 2 tablespoons olive oil For rubbing on chicken

For the Vegetables

  • 1 pound baby potatoes, halved Cut to similar size for even cooking.
  • 2 cups green beans, trimmed
  • 2 cloves garlic, minced

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Place the chicken breasts on a sheet pan and rub them with olive oil, then coat with the Parmesan mixture.
  • In a separate bowl, toss the halved baby potatoes with olive oil, minced garlic, salt, and pepper.
  • Spread the potatoes around the chicken on the sheet pan.

Cooking

  • Roast in the preheated oven for 20 minutes.
  • After 20 minutes, add the green beans to the sheet pan and return to the oven for an additional 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.

Notes

This dish is wonderful served hot from the oven, on its own or with a light salad. For added flavor, marinate the chicken in olive oil and spices for a few hours before cooking. You can swap the Parmesan with cheddar for a different cheesy flavor.
