  • 4 pieces chicken breasts Use boneless, skinless for best results.
  • 1 cup grated Parmesan cheese Can swap for mozzarella or cheddar.
  • 2 cups baby potatoes, halved Small potatoes are best for even cooking.
  • 2 cups green beans, trimmed Fresh green beans recommended.
  • 3 tablespoons olive oil Divided for tossing vegetables.
  • 4 cloves garlic, minced Fresh minced garlic adds flavor.
  • to taste salt and pepper Adjust according to preference.
  • 1 teaspoon Italian seasoning A blend of dried herbs.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss baby potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning. Spread them out on a sheet pan.
  • In the same bowl, add green beans and toss with the remaining olive oil, minced garlic, salt, and pepper. Set aside.
  • Coat the chicken breasts in the grated Parmesan cheese and place them on the sheet pan alongside the potatoes.

Cooking

  • Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
  • In the last 10 minutes of baking, add the green beans to the sheet pan.
  • Serve hot and enjoy!

Notes

Don’t overcrowd the pan to help everything cook evenly. Fresh veggies enhance flavor, and you can try different cheeses for variation. Check chicken temperature to ensure safe eating.
