- 8 oz 225g pasta (e.g., chickpea or lentil pasta)
- 1 cup cottage cheese
- 2 tbsp olive oil
- 1 medium onion diced
- 2 cloves garlic minced
- 1/4 cup milk
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1/4 cup Parmesan cheese optional
- Salt and pepper to taste
- Fresh herbs for garnish optional
Prepare the Cottage Cheese Sauce:
In a skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic until the onions are soft and fragrant.
In a high-speed blender, combine sautéed onions and garlic, cottage cheese, milk, cornstarch, lemon juice, and Parmesan cheese (if using). Blend until smooth and creamy.
Combine and Serve:
Return the drained pasta to the pot. Mix in the cottage cheese sauce, adding reserved pasta water as needed to achieve desired consistency.
Serve immediately, topped with extra Parmesan cheese and a squeeze of lemon, if desired.
