Ingredients
  

  • 8 oz 225g pasta (e.g., chickpea or lentil pasta)
  • 1 cup cottage cheese
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1/4 cup milk
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/4 cup Parmesan cheese optional
  • Salt and pepper to taste
  • Fresh herbs for garnish optional

Instructions
 

Prepare the Cottage Cheese Sauce:

  • In a skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic until the onions are soft and fragrant.
  • In a high-speed blender, combine sautéed onions and garlic, cottage cheese, milk, cornstarch, lemon juice, and Parmesan cheese (if using). Blend until smooth and creamy.

Cook the Pasta:

  • While blending the sauce, cook the pasta according to package instructions. Reserve about 1/4 cup of pasta water before draining.

Combine and Serve:

  • Return the drained pasta to the pot. Mix in the cottage cheese sauce, adding reserved pasta water as needed to achieve desired consistency.
  • Serve immediately, topped with extra Parmesan cheese and a squeeze of lemon, if desired.
