Ingredients
  

  • 6-8 fresh peaches peeled and sliced
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 cup oats
  • 1 cup flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • Pinch of salt
  • ½ cup cold butter cut into small pieces

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Prepare the peach filling: In a bowl, combine sliced peaches with brown sugar, vanilla, and cornstarch. Stir to mix well.
  • Prepare the topping: In a separate bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture becomes crumbly.
  • Grease a baking dish and spread the peach filling evenly in the dish. Top with the oat mixture.
  • Bake for 20-25 minutes or until the topping is golden and the filling is bubbling.
  • Serve warm with vanilla ice cream or whipped cream for a delightful treat.
