Batter Ingredients

  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk Can substitute with almond milk for dairy-free option.
  • 1/2 cup unsalted butter, melted

For Serving

  • 1 scoop vanilla ice cream Serve warm for best flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine sliced peaches, raspberries, and sugar. Add vanilla extract and mix gently.
  • In another bowl, whisk together flour, baking powder, and salt. Add milk and melted butter, mixing until combined.

Baking

  • Pour the fruit mixture into a greased baking dish.
  • Pour the batter over the fruit.
  • Bake for 35-45 minutes or until the top is golden brown and the fruit filling is bubbly.

Serving

  • Serve warm with a scoop of vanilla ice cream.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Can be frozen for up to 3 months. Reheat in the oven or microwave.
